SPAGHETTI ALL'ASSASSINA
Spaghetti all’assassina is a typical dish of Bari cuisine, famous for its bold and spicy flavour. The name “assassina” refers to the strong and daring character of the dish, which is prepared with spaghetti cooked directly in a spicy tomato sauce, sautéed until it becomes almost caramelised.
The trick is that the spaghetti, instead of being boiled separately, are toasted in the tomato sauce, absorbing all its flavour and becoming crispy at the edges. Chilli, garlic, olive oil, and sometimes a little broth are then added to achieve the right consistency. The result is an explosion of intense flavours, perfect for those who love spicy and savoury food.
